The best wood countertop depends on the look you want, how you will use the surface, and the finish you choose—not on a single hardness number. Hard maple gives a pale, restrained worktop; walnut brings chocolate-brown contrast; cherry adds warm red tones; and oak, ash, teak, and Eco-Lyptus each create a different visual statement. Beech, birch, hickory, and mahogany are also sold as countertop woods, although the cited catalog information provides fewer comparable details for them.

Treat the list below as a design-led shortlist rather than a universal ranking. Product lines vary by fabricator and region, so confirm current species availability, slab dimensions, edge construction, grain orientation, finish, cut-outs, and care instructions before ordering. A physical sample is especially valuable when color and grain are central to the decision.

At a glance: the 12 woods

The first eight species are listed in Wood Welded’s 2023 residential kitchen materials, while the final four are listed by Butcher Block Co. as countertop woods. Availability is therefore supplier-specific, not a guarantee that every fabricator can provide every species.

Eco-Lyptus (Lyptus) Deep reddish brown; tight, fine grain 1550 A red-brown look from a plantation-grown material
Teak Varied light-to-dark brown color 1155 Color variation rather than uniformity

The seven numerical entries in the table are the Janka scores published by Bally Block Co.’s wood-species page. The page labels them as Janka hardness scale scores but does not state units. They are manufacturer-published figures, not a complete countertop durability test.

The eight woods with the clearest appearance and hardness information

1. Hard maple

Hard maple is the most restrained visual reference point in this group. Wood Welded describes maple as blonde to light brown, with faint, close grain and a uniform texture. Bally Block characterizes hard maple as strong and dense and reports a Janka score of 1450. That combination suits a kitchen where the countertop should read as a clean, pale surface rather than a dominant pattern.

Ask whether the offered product is hard maple specifically, not simply a generic “maple” label. Confirm the edge profile and finish in a sample, because those details can change how the otherwise subtle grain appears.

2. Black walnut

Black walnut supplies the darkest clearly described option. The cited descriptions identify chocolate-brown color, lighter natural variation, and diverse grain; Bally Block reports a Janka score of 1010. The variation is part of the appeal, so do not expect every section of a slab to match a single uniform brown.

Walnut works when the counter is intended to look like furniture or to contrast with pale cabinets. Compare samples under your kitchen lighting before ordering: a small sample cannot show every transition in color or grain that may occur across a larger top.

3. Cherry

Cherry is described as rich amber to reddish brown, with fine texture and straight grain. Wood Welded calls its surface warm reddish brown with a satiny, fine texture, while Bally Block reports a Janka score of 950. It is the warm, softer-scoring choice among the best-documented species here, but the score alone does not establish that it is unsuitable or suitable for your particular use.

  • Halloween Pumpkin Ceramic Crafts Supplies: A Great painting gift for family, friends, kids, girls, women, student, classmate, teacher. For using in school, travel or used in the home and office.

Use a sample to judge the relationship between cherry’s warm tone, your cabinet color, and the finish you intend to apply. Request the maker’s guidance on how the selected finish affects the final color.

4. Red oak

Red oak is defined visually by a prominent grain. Bally Block describes tan to golden-brown color and distinct, coarse grain; Wood Welded calls the color golden brown and the grain distinct and varied. Its reported Janka score is 1290.

Choose red oak when you want the countertop’s pattern to remain visible from across the room. If you prefer a quieter surface, compare it directly with white oak or hard maple rather than relying on a color chip alone.

5. White oak

Wood Welded describes white oak as light yellowish cream with tight, clear grain and striations. The cited material lists it as available but supplies no Janka score, so red oak’s 1290 score must not be transferred to white oak.

White oak is a useful choice for a light surface where linear grain is still important. Ask the supplier to identify the species on the quote and provide a finish sample; “oak” without a red-or-white designation leaves a significant appearance difference unresolved.

6. Eco-Lyptus (Lyptus)

Bally Block describes Eco-Lyptus as a plantation-grown, fast-growing wood and reports a Janka score of 1550. Wood Welded describes a deep reddish-brown color with tight, fine grain. The plantation-grown and fast-growing wording is the manufacturer’s description; it is not an independent certification of sustainability.

This species can suit a design that wants a deep red-brown tone without the varied grain description associated with walnut. Ask which exact product line is being quoted, because availability and naming can differ among suppliers.

7. Teak

Teak is described as ranging from light to dark brown, with a Janka score of 1155 reported by Bally Block. Wood Welded lists teak among its island-top species. The sources supplied for this guide do not establish a water-resistance claim, a special maintenance schedule, or a performance advantage, so those assumptions should not drive the purchase.

Select teak when the natural color range is desirable. Have the fabricator show multiple pieces or a larger sample if you need to understand how much light-to-dark variation may appear in the finished top.

8. Ash

Ash is presented as pale yellow to light brown with straight, consistent grain, and Wood Welded calls it light blonde with brown and straight grain. Bally Block reports a Janka score of 1320. Its visual character is lighter and more linear than walnut or cherry, making it a candidate for a bright kitchen that still wants visible wood structure.

Confirm the finish and edge treatment on a sample. Those choices can make the same pale species look more contemporary, rustic, or furniture-like.

Four catalog choices that need closer verification

Beech

Butcher Block Co. lists beech among the woods it makes for countertops. The cited material does not provide a reliable, species-specific color, hardness, or maintenance comparison for this guide. Treat beech as a sourcing option: request a current sample, the exact construction, the finish system, and the manufacturer’s care instructions.

Birch

Birch is also listed as a countertop species. Because the supplied information does not establish a comparable appearance or Janka value, ask the fabricator for the current product specification rather than assuming that every birch top will look or perform the same.

Hickory

Hickory appears in the cited catalog of available woods, but no source supplied here supports a detailed, comparable performance profile. Inspect a representative sample and confirm the species, grain orientation, finish, and intended use in writing.

Mahogany

Mahogany is listed as a countertop wood, yet the commercial name can cover different species and sources. Ask the supplier to identify the exact species and origin. Do not accept a generic hardness or sustainability claim without documentation for the material you are buying.

How to read the Janka scores without over-reading them

Janka hardness is useful as one comparison point: in the cited manufacturer data, Eco-Lyptus is listed at 1550, hard maple at 1450, ash at 1320, red oak at 1290, teak at 1155, black walnut at 1010, and cherry at 950. Those figures are not a ranking of the “best” countertops. They do not account for finish, edge details, support, installation, impact location, moisture exposure, or whether you plan to cut directly on the surface.

Use the numbers to ask better questions rather than to make a purchase by spreadsheet. For example, if two samples meet your visual brief, their relative published scores may be a tie-breaker. If only one species fits your color scheme, the score should not erase the importance of finish compatibility and care requirements.

Construction, dimensions, and custom work to confirm

Wood Welded’s 2023 residential brochure describes its butcher-block tops as solid laminated edge-grain hardwood. Its island-top table lists thicknesses of 1-1/2, 1-3/4, 2-1/4, and 3 inches, while lengths and widths vary by product. The brochure also describes custom shapes and cut-outs for sinks, cooktops, knife storage, and insets. In that brochure, island-top species include maple, Eco-Lyptus, red oak, white oak, cherry, black walnut, teak, and ash; standard countertop listings include maple, Lyptus, walnut, red oak, and cherry. These are offerings in that 2023 brochure, not a market-wide availability list. See the Wood Welded residential kitchen brochure for the manufacturer’s details.

Samples matter when tone and grain are decisive. Finish and maintenance: decide how the counter will be used

Finish is not a cosmetic afterthought. The Home Depot butcher-block countertop buying guide recommends food-grade mineral oil or a specialized butcher-block conditioner to keep butcher block looking fresh. Butcher Block Co. says its natural-oil finish is the choice when a customer intends to cut on the block, while it describes a different finish as a lower-maintenance, furniture-style option. Those are vendor-specific recommendations, not a universal re-oiling calendar.

Tell the supplier whether the surface is a cutting area, a prep area used with boards, or primarily a serving and work surface. Then follow the care schedule and compatible-product list for the installed finish. A product that is suitable for one finish can be inappropriate for another.

Food preparation and sanitation boundaries

USDA FSIS says, “Consumers may choose either wood or a nonporous surface cutting board such as plastic, marble, glass, or pyroceramic.” It recommends one board for produce and bread and a separate board for raw meat, poultry, and seafood to reduce cross-contamination. After use, its guidance is to wash with hot, soapy water, rinse, and air-dry or pat dry. The USDA page was updated August 27, 2024: Cutting Boards.

That advice concerns cutting boards. It does not, by itself, establish a complete sanitation protocol for an installed wood countertop. If you cut directly on the counter, verify that the finish is intended for that use and still keep a separate board for raw proteins.

A practical selection process

  1. Define the visual brief. Decide whether you want pale and quiet (hard maple, white oak, ash), warm and reddish (cherry or Eco-Lyptus), dark and contrasting (black walnut), or strongly patterned (red oak).
  2. Request matching samples. Compare samples beside cabinet doors, flooring, backsplash tile, and the actual room lighting. Ask for more than one piece when the species is naturally variable.
  3. Choose the use and finish together. Identify cutting zones, appliance areas, and sections that will remain furniture-style. Select only a finish the maker approves for that use.
  4. Use hardness as a secondary filter. Compare the published Bally Block scores only after the visual and functional requirements are met, and keep the manufacturer attribution with every number.
  5. Finalize the build sheet. Approve thickness, grain orientation, seams, edge profile, cut-outs, support, installation, and field-finishing responsibilities.
  6. Reconfirm availability before fabrication. Ask for the current regional lead time, exact species identity, and confirmation that the quoted dimensions and finish are still offered.
