Chili Pepper: Types, Heat, Growing, Harvesting, and Storage

Chili peppers range from mild to very hot and can be used green or ripe. Learn how to choose a variety, grow it, harvest carefully, and store peppers.

A chili pepper is a hot-fruited pepper in the Capsicum group, not one specific variety. Types differ in heat, size, color, and best use; color alone does not tell you how hot a pepper is. You can grow many types in a home garden, pick them green or ripe, and use them fresh, cooked, dried, or ornamentally.

What is a chili pepper?

“Chili pepper” is a common name for hot peppers across a range of Capsicum varieties. Examples include jalapeño, serrano, hot banana, ancho, habanero, and other types. They vary in shape, heat, growing requirements, and culinary use, so choose a variety for its intended use and the conditions you can provide rather than relying on its color.

Chili peppers can be eaten fresh or cooked, dried for later use, or grown as ornamentals. Some are harvested green; others are commonly allowed to ripen to red.

What makes chili peppers hot?

Capsaicinoids, including capsaicin, create the burning sensation. According to University of Illinois Extension, capsaicin acts on pain receptors in the mouth rather than taste buds. Heat-related compounds are associated with the pepper’s pale internal tissue.

Heat varies among types, and color is not a reliable way to judge it. As one dated example rather than a universal ranking, a 2020 University of Illinois Extension article gives a range of 0 to 300,000 Scoville Heat Units from bell pepper to habanero. Individual varieties and conditions can differ, so treat that range as the article’s comparison, not a current comprehensive scale for all peppers.

How do you choose a chili pepper variety?

Start with what you want from the plant and pepper. Consider these factors before choosing seeds or starts:

  • Use: Decide whether you want peppers for fresh eating, cooking, drying, or ornamental display.
  • Heat: Select a type suited to your preference; do not use color as a shortcut for estimating heat.
  • Maturity: Check whether you plan to use the fruit green, ripe, or at more than one stage.
  • Space and season: Match the variety to your growing space and local conditions. Available extension guidance does not provide a single current, comprehensive comparison of every type’s mature size or days to harvest.

How do you grow chili peppers?

Peppers are warm-season plants, and planting timing depends on local frost conditions. For Minnesota home gardens, University of Minnesota Extension recommends starting seeds indoors about eight weeks before planting outdoors and waiting to transplant until nighttime lows are above 50°F. Those are Minnesota-specific thresholds, not universal calendar dates; follow local frost guidance where you live.

Start seedlings with strong light

Give indoor seedlings strong light. The University of Minnesota Extension notes that light that is weak or too far away can result in leggy growth. If a bright natural-light location is unavailable, a seedling grow light is one option.

Transplant for local conditions

Move plants outdoors only when conditions are suitable for a warm-season crop. Use local frost dates and nighttime temperatures to adapt the Minnesota guidance; the cited advice is not a cultivar-by-cultivar planting calendar.

When and how should you harvest chili peppers?

Harvest peppers when they reach mature size; you do not have to wait for red color. Some varieties can be used green, and green chiles are called for in some recipes. Hot peppers are often picked red-ripe, but the right stage depends on the variety and how you plan to use the fruit.

Cut the stem rather than pulling the fruit to help reduce damage to the plant. Hot pepper oils can irritate skin, nose, and eyes, so wear gloves when handling them and wash your hands before touching your eyes or other sensitive areas. Garden snips can make cutting stems easier.

How should you store fresh or dried chili peppers?

University of Illinois Extension’s produce guide recommends keeping fresh peppers in a plastic bag in the refrigerator for up to five days. For whole dried peppers, it recommends an airtight container in a cool, dry place for two to four months. These are general storage guidelines, not guarantees; freshness and storage conditions affect how long peppers keep.
