Bar Agricole is a restaurant and bar in San Francisco’s South of Market district, designed by Aidlin Darling Design as an adaptive reuse of a historic industrial warehouse. The project, completed in August 2010 according to Architectural Record, keeps the building’s utilitarian character while introducing reclaimed oak, custom metalwork, concrete seating, glass skylights and a garden tied to the restaurant’s agricultural concept.
Its importance is less about a decorative style than about a method: retain the useful parts of an old shell, extract its strongest spatial qualities, and make every new surface—wood, concrete, steel, glass and furniture—support the building’s history and the food-and-cocktail program.

What is Bar Agricole?
Bar Agricole is a restaurant and bar project in San Francisco’s industrial South of Market (SoMa) district. Aidlin Darling Design converted the single-story portion of a three-story historic warehouse rather than treating the site as a blank lot. Architectural Record reported completion in August 2010 and described a 4,000-square-foot restaurant and bar paired with a 1,600-square-foot garden.
The rest of the warehouse became offices, also designed by Aidlin Darling Design. That arrangement matters because the restaurant was not an isolated fit-out: it was one part of a broader reuse strategy for an existing building. The architects had to give a public hospitality program a distinct identity while allowing the remaining structure to serve a different use.

Aidlin Darling describes the project as “a modern tavern” and emphasizes close collaboration with artists and fabricators. The result is an interior that reads as both rustic and urban: the old industrial premise remains legible, but the details are carefully made rather than left unfinished.
How the warehouse became a restaurant
Retaining the industrial premise
The project starts with a former industrial warehouse and its utilitarian associations. Instead of concealing that background behind a generic restaurant envelope, the design uses a restrained palette of steel, concrete and reclaimed oak. Those materials establish a visual connection to industrial construction while adding the warmth and tactility expected in a dining room.

The adaptive-reuse decision also limits the project’s definition to what the documented record supports. The sources identify the reused portion of the warehouse and the new interior elements, but they do not provide a detailed structural survey, a list of demolished components or measured energy performance. It is therefore more accurate to describe Bar Agricole as a carefully inserted hospitality program within an existing shell than to claim a particular preservation technique that has not been documented.
Extracting rather than decorating
Joshua Aidlin, founding principal of Aidlin Darling Design, describes the firm’s approach this way: “Architecture is not an additive process, but an extractive one. You’re extracting the latent solution that’s always been there.” At Bar Agricole, that idea appears in the decision to work with the warehouse’s inherent toughness and scale, then sharpen it with a limited set of high-quality interventions.
David Darling expresses a related principle: “In our search for timeless, elemental design, we stress value over convenience, longevity over expedience.” The reclaimed materials and custom fabrication are consistent with that position. They are not applied as surface nostalgia; they are used to make the restaurant’s furniture, lighting, seating and enclosure part of one durable architectural language.

Materials used in the Bar Agricole interior
Reclaimed oak and whiskey-barrel staves
Reclaimed wood is the project’s most recognizable material move. Juniper Architecture reports an enveloping wood surface made from reclaimed whiskey-barrel staves. The same account identifies reclaimed oak barn beams and barrels reused for bar tops, table tops, chairs and banquette seats.
These sources of wood give the room an agricultural and craft association without requiring a themed display. Barrel staves carry the memory of fermentation and spirits; barn beams connect the material to rural construction; and the furniture extends those references into the parts of the room guests touch. The strategy also creates variation in grain, color and wear that a uniform new-wood finish would not provide.
Concrete seating and industrial metal
Concrete appears in the ductile concrete banquettes described by Juniper Architecture. Their mass contrasts with the lighter, more articulated wood elements and gives the seating a built-in quality appropriate to an adapted warehouse. The project record also identifies custom metal lighting and Chris French Metal as the metal fabricator.
Steel is part of Aidlin Darling Design’s stated utilitarian palette. In this context, metal is not merely a structural reference: it supports lighting, frames details and reinforces the visual relationship between the restaurant and its industrial setting. The available project descriptions do not specify steel grades, coating systems or fabrication dimensions, so those technical details should not be inferred.
Borosilicate glass and daylight
Juniper Architecture identifies borosilicate glass skylight installations as another distinctive intervention. Glass introduces a controlled counterpoint to the opaque wood and concrete. It also helps the project connect the interior to changing daylight without abandoning the enclosed, substantial character of the warehouse.

The sources do not publish daylight measurements or a lighting-performance study. What is established is the presence of custom glass skylight work and a dedicated lighting designer, Revolver Design. That combination indicates that natural and artificial light were treated as designed elements rather than incidental services.
Garden, circulation and the indoor-outdoor program
The 1,600-square-foot garden gives the restaurant an outdoor counterpart to its 4,000-square-foot indoor program. Architectural Record’s figures describe the project’s reported areas; they are not independent measurements of the current venue.
In design terms, the garden broadens the adaptive-reuse strategy beyond the former warehouse room. The interior can preserve the building’s weight—wood, concrete and metal—while the garden supplies openness and a direct connection to cultivation, ingredients and seasonality. The agricultural idea therefore operates spatially as well as through the menu and cocktail program described by the project sources.
No source establishes the garden’s current planting scheme, seating capacity, operating schedule or public access. Those details should be confirmed separately rather than inferred from the historical project record.
Why the agricultural concept matters
Aidlin Darling Design says that the LEED Platinum design takes inspiration from the sustainable agricultural roots of the restaurant’s artisanal food and cocktail program. This is the architect’s description of the design rationale and certification status; the available record does not independently validate the certification or explain which criteria were met.

Juniper Architecture similarly describes the restaurant and its menu as organized around sustainable and local ingredients, materials and craft. The connection between food and architecture is therefore conceptual and material: reclaimed barrels and barn wood evoke agricultural production, while the garden gives the dining program an outdoor, cultivated setting.
It would be inaccurate to turn that concept into unsupported performance claims. The sources do not state local-sourcing percentages, operational energy savings, water-use reductions, waste-diversion rates or a certification scorecard. Bar Agricole can be discussed as a project that aligns its architectural language with an agricultural ethos, not as a quantified sustainability case study.
Artists, fabricators and consultants
The project’s character depends on a large collaborative team rather than on the architect alone. Aidlin Darling Design credits client Thad Vogler and names Northern Sun Associates as general contractor. The portfolio lists the following roles:
| Role | Contributor |

Keeping those two statements distinct avoids overstating what each record establishes.
What painters and material-focused designers can learn from the project
Build a palette before choosing finishes
Bar Agricole demonstrates the value of a small, coherent material palette. Steel, concrete and reclaimed oak do different jobs, but they share an elemental, workmanlike character. For a painter or color-focused designer, the lesson is to begin with the existing surfaces and their natural variation before adding color or graphic treatment. The wood’s grain, the concrete’s aggregate and the metal’s reflectivity already provide visual information.

The barrel staves and barn beams are not generic “rustic” decoration. Their previous uses connect directly to the restaurant’s agricultural and beverage identity. Reclaimed materials work most convincingly when their history is relevant to the new program and when the design allows their irregularities to remain visible.
Coordinate craft with architecture
Custom lighting, concrete banquettes, glass installations, furniture, casework and integrated photography were developed as parts of the same environment. A painted intervention in a similarly complex interior should be coordinated with lighting angles, seating edges, joinery and circulation rather than treated as an isolated image on a wall.
How to evaluate Bar Agricole as an adaptive-reuse precedent
When comparing this project with another restaurant conversion, use documented criteria rather than assuming that every old-building project works the same way:
- Previous use and retained area: identify what kind of building existed and which portion was reused. Bar Agricole occupies the single-story section of a historic three-story warehouse.
- Introduced versus retained materials: distinguish the existing industrial shell from new reclaimed oak, concrete, steel, metal lighting and borosilicate glass.
- Custom fabrication: note whether the project relies on ordinary catalog components or named fabricators for furniture, lighting, concrete, metal, glass and casework.
- Indoor-outdoor relationship: record whether a garden or courtyard is part of the program; this project includes a documented 1,600-square-foot garden.
- Sustainability evidence: separate an architect’s stated LEED or agricultural rationale from independently verified certification details and measured performance.
- Collaborative scope: include engineers, contractors, consultants, artists and photographers, not only the architecture firm.
On those criteria, Bar Agricole is notable for combining a clearly identified warehouse reuse with an unusually broad fabrication and art program. Its record is strongest as evidence of design intent, material choices, project dimensions, collaborators and awards.

What the historical record does not tell you
The documented project sources do not establish whether Bar Agricole currently operates, what its present menu or hours are, how reservations work, or whether visitors can see the interiors today. They also do not establish that the original furnishings remain available for purchase or unchanged from the 2010 project.
For current venue information, consult a current official hospitality listing or contact the operator directly. For architectural study, use the dated project records and treat present-day conditions as a separate question.
