Chocolate and cherries work in everything from a rich layered torte to a simple chocolate-dipped fresh cherry. Choose the format first, then match the cherry to the dessert: fresh whole fruit suits dipping, while pie filling offers a ready-to-use topping or cake layer. For a deeply chocolatey cake, tart cherries can bring welcome acidity.
Choose a chocolate-and-cherry dessert by effort and texture

The formats and recipe details above come from Hersheyland’s fudge torte, Hersheyland’s upside-down cake, Food Network Kitchen’s dipped cherries, King Arthur Baking’s Black Forest cake, and Epicurious’s chocolate cherry cake.
When pie filling makes the easiest choice
Cherry pie filling is the practical route when you want a baked dessert without pitting or preparing fresh fruit. In Hersheyland’s upside-down cake, it goes into the pan beneath cocoa cake batter, so the fruit becomes the topping when the cake is served. The recipe lists 15 minutes of preparation and 43 minutes of baking; its directions give a 40–45 minute baking range. It uses a 9-inch square pan and describes itself as beginner-friendly.

For a more layered finish, Hersheyland’s fudge torte pairs a chocolate base with a cream-cheese and whipped-cream mixture, then adds cherry pie filling and chocolates before serving. Chilling is part of the process, and the recipe lists a 9-inch springform pan. Its base bakes at 350°F for 25–30 minutes.
The publisher’s nutrition panel for the torte states 490 calories per 157 g slice and a yield of 12 servings. For the upside-down cake, it states 220 calories per 88 g serving and a yield of 12. Those numbers apply only to the respective recipes and serving declarations; they are not general estimates for chocolate-and-cherry desserts.

When tart cherries balance a rich chocolate cake
Chocolate’s richness can make a sweet cherry topping feel heavy. Epicurious recommends sour or tart cherries for its chocolate cherry cake, noting that sweeter cherry products can make that particular cake cloying. Treat this as guidance for that recipe, not a universal rule: sweetness varies by product and recipe, and you may prefer a sweeter result.

When to dip fresh cherries in chocolate
For a simpler dessert that keeps the fruit whole, Food Network Kitchen’s recipe dips fresh cherries by their stems into melted dark chocolate, then sets them on parchment paper. It lists one hour total and a yield of one pound. The key difference from cake recipes is the cherry itself: use fresh whole cherries here, rather than pie filling.

Maraschino cherries are one possible cherry product, but the term is not interchangeable with fresh cherries or cherry pie filling. The FDA’s October 1980 compliance-policy guidance discusses historical use and labeling of maraschino cherries. It says cherries artificially colored red and flavored, when used as an ingredient in another food, should be declared with that description, with the preservative named where applicable.
