Restaurant and bar design is not decoration added after the menu is complete. It frames how guests read the food, move through the room, hear the service and remember the visit. The strongest hospitality spaces make architecture, materials, menu and service feel like one offer.
That principle applies across Australia and New Zealand, from high-end restaurants and bars to small cafés, pop-ups, food retailers and visual identities. A spectacular object can attract attention, but design earns its value when it supports the way a venue actually works.

What hospitality design changes in a dining experience
Design establishes expectations before the first bite. A compressed entry, an open kitchen, a reflective ceiling, a soft acoustic treatment or a highly visible bar each tells guests how to interpret the place. Those cues influence whether a venue feels formal or relaxed, quick or lingering, intimate or social.
Architecture critic and academic Rachel Hurst describes the relationship directly: “The eating experience is effectively amplified by design cues writ large.” Her essay “Eating and Design,” published in the thirtieth anniversary issue of Artichoke, treats design as an active part of dining rather than a neutral container.

The useful test is synergy. Does the room work with the food, menu and service, or is it merely a dramatic backdrop? A design that looks impressive in photographs but makes ordering, serving, cleaning or conversation difficult has failed part of the hospitality brief. Conversely, restrained work can be powerful when every decision reinforces the offer.

Guests form a judgment before service begins. Exterior visibility, the threshold, lighting and the arrangement of tables establish a level of welcome and a likely pace. A tasting-menu restaurant may need a sequence that slows arrival and builds anticipation; a café may need immediate clarity about where to queue, order and collect. These are not rigid formulas, but the spatial message should match the operation.
Design connects sensory cues
Colour, texture, light, sound and smell reach the guest at the same time as the food. The materials around a dish can make it feel rustic, precise, playful or luxurious. Acoustics affect whether a group can talk. Lighting changes how food and faces are read. The point is not to maximise every sensation; it is to coordinate them so that no single gesture contradicts the menu or service.
Four tests for a well-designed hospitality space
A useful evaluation separates appearance from performance. The following tests come from the way hospitality projects have been judged in Australian and New Zealand design coverage.
1. Fit with the food and service
Ask what the venue promises and whether the space makes that promise legible. A fast, high-volume operation needs visible circulation, efficient hand-offs and seats that support its expected dwell time. A destination restaurant may prioritise procession, privacy and a slower rhythm. The same design language cannot be judged identically in both settings.
- Does the room’s character support the cuisine and menu structure?
- Can guests understand where to enter, wait, order, sit and leave?
- Do staff routes work without repeatedly interrupting guests?
- Does the level of formality match the price and service style the venue presents?
2. Practical performance
Hospitality spaces experience spills, heat, humidity, abrasion, constant cleaning and heavy traffic. The 2017 awards jury specifically highlighted practicality and durability. Materials and joinery therefore matter as much as the initial visual concept. A finish that photographs beautifully but stains, chips or cannot be repaired becomes an operational liability.

Look for surfaces that tolerate the actual use, edges that are protected from impact, hardware that can be serviced and details that allow cleaning crews to reach difficult corners. Durable design does not mean making every surface hard or industrial. It means selecting and detailing materials for the work they must do.
3. Coherence across touchpoints
A venue is experienced as a sequence: sign, doorway, host point, table, bathroom, menu, glassware, bill and exit. Coherence does not require identical colours or repeated logos. It means the parts feel intentionally related. If the interior suggests a quiet, crafted experience but the menu, lighting and service feel rushed, the contradiction is noticeable.
4. Total effect rather than one spectacular gesture
A ceiling, staircase or feature wall may become the photograph associated with a project, but it should not stand in for the whole design. Evaluate how the dramatic moment interacts with seating, sightlines, acoustics, staff work and maintenance. The strongest projects make many modest decisions reinforce one another.
Which kinds of projects belong in hospitality design?
Hospitality design is broader than a conventional restaurant interior. Awards coverage in the region has included several distinct formats, each with a different operational problem.
Restaurants and bars
These venues often balance atmosphere with long service sequences. Restaurants may need varied degrees of privacy, controlled views and comfortable seating for a meal’s full duration. Bars typically manage standing and seated guests, rapid clearing, bottle display, lighting changes and a prominent service counter. In both cases, the design should make the intended social behaviour easy without dictating it too forcefully.
Cafés
Cafés commonly combine short visits, takeaway orders and customers who stay to work or meet. The design challenge is legibility: a guest should quickly understand the queue, ordering point, pickup route and available seating. Small details such as bag hooks, ledges, table spacing and robust counter edges can have more daily impact than an expensive focal feature.

Pop-ups and temporary environments
Temporary projects have a shorter life and often a tighter installation window, but they still need a clear identity and safe, efficient operation. Components may have to be transported, assembled, adapted to an existing site and removed without damage. Reusable structures, simple connections and graphics that survive changing layouts can extend the value of a temporary concept.
Do these 3 things before closing this tab:
1Fix the driver behind crashes, sound loss and screen glitches2Repair Windows errors before they cause bigger problems3Scan for outdated or missing drivers - takes under a minuteFood and drink retail
Retail environments add product display, browsing and transaction requirements to hospitality concerns. Packaging, shelving, refrigeration, queue management and sampling all compete for attention. The design succeeds when customers can understand the offer, handle products and complete a purchase without losing the sense of the brand’s food culture.
Visual identities
Hospitality identity includes names, typography, menus, packaging, uniforms, signage and digital touchpoints as well as the room itself. A visual system should work at multiple sizes and speeds: a sign read from the street, a menu read at the table and a label handled in a shop. Treating identity as part of the environment prevents a disconnect between the physical space and what guests take away.
What the awards record shows—and what it does not
Historical editions illustrate the breadth of the field, but their totals should not be mistaken for current program statistics.
| Edition | Reported figure | What it represents |
|---|---|---|
| 2015 Eat Drink Design Awards | 88 projects shortlisted | Figure reported by ArchitectureAu for that edition |
| 2017 Eat Drink Design Awards | 94 projects shortlisted across six categories | Figure reported by ArchitectureAu for that edition |
The 2024 account describes a program ranging from high-end restaurants and bars to small cafés and pop-ups. That description confirms the range of scales and formats, not a new overall shortlist total. Comparing projects therefore requires like-for-like questions about venue type, scale and operating demands.
Can a small budget still produce thoughtful design?
Yes, but the evidence should be stated carefully. The 2017 jury observed that “The projects with the smallest budgets this year showed the most attention to such detail and created the most thoughtful design moments.” This is a jury observation about that edition, not a guarantee that low-cost projects are always better.

A limited budget can encourage precision. Concentrating resources on the entry, counter, lighting, seating comfort or a few durable details may create a stronger experience than spreading money thinly across decorative finishes. Repetition, repairability and standard components can also reduce waste while making the venue feel deliberate.
Prioritise decisions guests and staff feel
- Resolve circulation and queueing before buying decorative elements.
- Spend on surfaces exposed to constant contact, moisture and cleaning.
- Use lighting to establish mood and visibility rather than relying on expensive objects.
- Choose a small number of distinctive details and repeat them consistently.
- Coordinate menus, signage and packaging with the spatial identity.
Materials and joinery: the unglamorous core of performance
Material selection should begin with a use schedule. A host stand, bar top, dining table, bathroom vanity and service corridor each face different forces. Ask how often a surface will be touched, what will be spilled on it, which cleaning products will be used and whether a damaged component can be replaced without dismantling the room.
Joinery deserves the same scrutiny. Doors, drawers, shelving and built-in benches receive repeated impacts and adjustments. Accessible fixings, replaceable panels and straightforward tolerances help a venue recover from wear. Details that hide dirt or trap moisture create recurring maintenance work even when the design looks pristine on opening day.

Durability is also an experience issue. Worn finishes, loose hardware and improvised repairs signal neglect to guests. Well-chosen materials age in a way that remains compatible with the venue’s character, allowing patina where it is attractive and preventing failure where hygiene or safety is involved.
A practical method for assessing a venue
Use this sequence when reviewing an existing space, briefing a designer or comparing shortlisted projects.
- Describe the offer. Write down the food, drinks, service style, expected visit length and busiest periods. Avoid evaluating a room without knowing what it must support.
- Map the guest journey. Follow the route from street or arrival point through ordering, seating, eating, payment and departure. Note confusion, bottlenecks and moments where the design creates anticipation or comfort.
- Map the staff journey. Trace deliveries, preparation, service, clearing, waste and restocking. A beautiful guest route cannot compensate for a back-of-house system that causes collisions or delays.
- Test sensory alignment. Check whether light, sound, colour, texture and views reinforce the menu and service. Identify any cue that promises something the operation does not deliver.
- Inspect wear points. Examine corners, handles, thresholds, tabletops, upholstery, wet areas and cleaning access. Ask what will happen after months of daily use, not only on opening night.
- Judge the whole composition. Separate the memorable feature from the accumulated effect of planning, materials, identity and service. A project should be convincing even when the camera is pointed away from its signature element.
How to compare projects fairly
Comparisons become misleading when a pop-up is judged like a permanent restaurant or a café is judged like a cocktail bar. Start by grouping projects by venue type and scale. Then apply the same four axes: fit with the hospitality offer, practical performance, venue context and total execution.

For a restaurant, ask whether the room sustains a meal and supports the kitchen’s service pattern. For a bar, examine standing density, counter operation and atmosphere after dark. For a café, prioritise queue clarity, turnover and comfort for different lengths of stay. For a pop-up, add transport, assembly and removal to the performance test. For food retail, include browsing and transaction flow. These distinctions make the comparison useful rather than purely stylistic.
Common design mistakes and better corrections
Designing a photograph instead of an operation
A single dramatic view can conceal poor acoustics, obstructed staff routes or uncomfortable seating. Correct this by reviewing plans, movement and service sequences alongside images.
Choosing fragile finishes for high-contact areas
Replacing damaged surfaces repeatedly erodes both budget and consistency. Reserve delicate materials for protected moments and specify robust, maintainable finishes where hands, trays, chairs and cleaning equipment will meet them.
Letting identity stop at the logo
A logo cannot create coherence by itself. Extend the visual language to menus, signs, packaging, uniforms and the arrangement of information so guests encounter one legible system.
Ignoring the smallest details
Handles, hooks, ledges, table spacing and light levels shape comfort every day. The 2017 jury’s praise for detail in the smallest-budget projects is a reminder that attention is often more valuable than spectacle.

Hospitality design works when it joins ambition to use. The room should make the food and service more intelligible, give guests a comfortable and memorable journey, and withstand the repetitive work that keeps a venue open. Across restaurants, bars, cafés, pop-ups, retail and identity systems, the measure is the same: design is strongest when every visible decision supports the total experience.
