There is no single “ideal” restaurant noise level. The right acoustic target depends on the concept, room volume, ceiling height, seating density, table spacing, occupancy, music and kitchen or service activity. A successful room lets guests understand one another without making the space feel dead. In Jens Holger Rindel’s 2019 communication model, an ambient level of 71 dB is proposed as a design basis for a speaker heard at one metre with a −3 dB signal-to-noise ratio; it is guidance from a technical paper, not a legal limit. The same paper suggests background music should stay at or below 60 dB for satisfactory verbal communication in that model.

Design for the atmosphere you want, then verify the occupied room. Absorptive wall and ceiling treatments, quieter building services, sensible music levels and measured placement can reduce reverberation while preserving energy.

What “right acoustics” means in a restaurant

Restaurant acoustics are not simply a contest to make a room as quiet as possible. Conversation, privacy, music, service sounds and visual character all compete for the same acoustic space. A quiet tasting room, a busy casual restaurant and a bar can have different successful soundscapes.

The practical goal is speech intelligibility at the tables: guests should not have to lean forward, repeat themselves or raise their voices throughout a meal. At the same time, some reflected sound creates liveliness and signals that the venue has energy. Sean Browne, principal scientist at Armstrong World Industries, summarized the balance in a manufacturer case study: “Some reverberation will keep the place lively, but too much and it just feels loud.”

Acoustic capacity is a useful way to frame the design. It describes how many people a room can accommodate while still allowing adequate communication under its actual geometry and sound conditions. Capacity falls when reverberation, competing noise or table distances increase, and it changes as occupancy changes.

Is there an ideal noise level?

No universal number applies to every restaurant. The most often quoted figures need to be kept in their context:

Figure What it represents How to use it
71 dB Rindel’s 2019 paper proposes this ambient-noise basis for a speaker at one metre and a −3 dB signal-to-noise ratio. Use as a starting design criterion for communication, not as a statutory restaurant limit. Read the full paper at European Acoustics Association, “Restaurant acoustics – Verbal communication in eating establishments”.
60 dB The paper’s model suggests background music should not exceed this level for satisfactory verbal communication. Treat it as model-specific guidance. Music may need adjustment by zone, time of day and occupancy.
0.9 seconds Reverberation time reported after treatment in Armstrong’s Suburban Beer Garden case study. An example outcome for one room, not a universal restaurant target.

Noise also changes through feedback. As the room gets louder, diners instinctively speak louder; this is the Lombard effect. Their louder voices raise the ambient level, prompting still louder speech. Room volume, reverberation time, number of occupants and the type of gathering all influence that loop. A design that works at half occupancy can become uncomfortable at a full Saturday service.

Rindel’s paper reports that 52 percent of surveyed people with impaired hearing were severely or much disturbed by noise in restaurants, cafés and canteens. The figure is attributed to an earlier Norwegian investigation cited in the 2019 paper, not presented as a new survey by Rindel. Good speech conditions therefore support accessibility as well as comfort.

Why hard restaurants become loud

Concrete floors, glass, tiled walls, polished stone, metal ceilings and exposed structure reflect sound instead of absorbing it. Open ceilings can leave a large volume untreated, so speech and clatter continue bouncing between parallel surfaces. The result is longer reverberation: sounds from dishes, chairs, music and conversation overlap rather than fading quickly.

Geometry matters as much as finish. High ceilings increase volume; closely packed tables add more talkers; long sightlines let sound travel between groups; and an open kitchen or bar introduces concentrated mechanical and human noise. A small room with many hard surfaces may feel louder than a larger room with strategically distributed absorption.

Background music masks speech when it is too loud or concentrated in one area. Heating, ventilation and air-conditioning equipment, refrigeration, dishwashing, extract hoods and deliveries can add a constant noise floor. Diagnose these sources separately before buying treatment.

Set the acoustic brief before selecting finishes

Write the acoustic brief alongside the seating plan and interior concept. It should answer four questions:

  • Who must communicate? Identify diners, staff, hosts, kitchen and bar teams, and any areas where instructions or announcements are critical.
  • What mood is intended? Decide whether the room should feel intimate, animated, theatrical or club-like. “Lively” is not the same as uncontrolled reverberation.
  • What occupancy is realistic? Model quiet periods and peak service. Include table density, expected group sizes and whether standing guests gather at the bar.
  • Which sounds are acceptable? Set expectations for music, open-kitchen activity, glassware, service equipment and building systems.

Divide the plan into acoustic zones where useful. A bar may tolerate more energy than a dining area; a private room may need stronger speech privacy; and a host stand or service corridor may require better staff communication than a decorative lounge.

How to assess an existing restaurant before a retrofit

Start with the complaint, not the product catalogue. Ask whether diners report a long echo, difficulty hearing across a table, intrusive kitchen noise, excessive music, clattering dishes or a combination. Different causes require different interventions.

  1. Document the room. Record dimensions, ceiling height, exposed surfaces, glazing, partitions, seating layout, bar and kitchen locations, and any existing soft finishes.
  2. Observe several operating conditions. Note sound during an empty room, normal service and peak occupancy. Record music settings, equipment cycles and where staff or diners struggle to communicate.
  3. Measure reverberation and sound sources. A qualified acoustic professional can measure decay in the occupied room and identify dominant mechanical, kitchen or music sources. Measurements are more informative when tied to the actual furniture and occupancy pattern.
  4. Assess acoustic capacity. Relate the room’s reverberation, ambient noise, table distances and expected number of talkers to the number of people who must communicate successfully.
  5. Set performance criteria. Define what “better” means: intelligible conversation at a specified table distance, lower service noise, a controlled music level or a particular reverberation response by zone.
  6. Test the proposal. Check absorption locations, fire and building requirements, cleanability, lighting conflicts and access for maintenance before installation.

Anderson Acoustics describes this measured approach at Wild By Tart in Belgravia: the team assessed reverberation and acoustic capacity, established performance criteria, advised on treatment and considered building-services noise. A consultant is especially useful when a restaurant has a high ceiling, mixed uses, persistent equipment noise or a failed first retrofit. See the project description at Anderson Acoustics’ Wild By Tart case study.

Acoustic treatment options that can support the architecture

Absorption works best when it is distributed where sound energy is strongest and where it will not be blocked by furniture or decorative elements. The right combination depends on frequency performance, quantity, location and the room’s visual language.

Approach Useful when Architectural considerations Limitations to check
Absorptive acoustic wall panels Hard walls create strong reflections between tables or along long sightlines. Panels can be framed, printed, shaped or colour-matched and placed between seating zones. A few small panels may not provide enough area for a large, busy room; verify frequency performance and cleanability.
Ceiling clouds or suspended baffles The ceiling is open, high or visually important but offers little absorption. Clouds can define the bar or dining zone while preserving an exposed-structure aesthetic. Coordinate suspension with lighting, sprinklers, ventilation, sightlines and fire requirements.
Integrated acoustic ceiling panels A new build or major renovation allows the ceiling system to be coordinated early. Panels can create a continuous field or a deliberate pattern rather than looking like an add-on. Do not assume a ceiling rating predicts the whole room; wall reflections and occupancy still matter.
Soft furnishings and partitions Loose furniture, curtains, upholstered seating or room dividers can add distributed absorption and zoning. They can support the concept and improve privacy without changing the shell. They may be moved, cleaned or replaced, so their acoustic contribution can vary over time.
Source and layout control Kitchen, HVAC, dishwashing, deliveries or loudspeakers dominate the noise floor. Locate noisy equipment away from quiet seating, isolate vibration and zone loudspeakers. Absorption cannot eliminate a mechanical source that remains excessively loud.

Commercial acoustic wall panels and ceiling systems should be specified as part of a room design, not selected by appearance alone. Armstrong’s restaurant guidance shows how wall and ceiling treatments can control noise while remaining visible architectural elements: Restaurant Noise Control.

Making treatment look intentional

Architectural integration starts with the reflected ceiling plan and elevations. Reserve absorption zones before lighting, sprinklers, signs and artwork are fixed. Align panels with banquettes, columns or circulation lines; use repeated shapes to establish rhythm; and select finishes that tolerate grease, cleaning and contact in the relevant area.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Exposed interiors do not have to choose between concrete character and intelligible speech. Suspended clouds can float below an open deck, while wall systems can become colour fields or graphic features. In a small room, treating the ceiling and the wall opposite the loudest seating may be more effective than concentrating every panel in one location. In a high room, overhead absorption is often needed because wall treatment alone leaves a large reflective volume.

Maintain access to lights, sprinklers, diffusers and services. Confirm flame-spread, smoke, hygiene and local code requirements with the project team; a visually attractive material that cannot be approved or maintained is not a durable solution.

Case example: Suburban Beer Garden

Armstrong’s June 28, 2021 case study of Suburban Beer Garden in Exton, Pennsylvania illustrates the design trade-off. The exposed structure and concrete floors were selected to create a vibrant, energetic atmosphere. Once occupied, however, the room became difficult for conversation. Armstrong reports reverberation readings near 1.5 seconds.

The project used a customised SOUNDSOAK wall treatment, SOUNDSCAPES Shapes acoustic clouds over the bar and custom-fit TECTUM panels. The company reports a 30 percent reduction in reverberation time, reaching 0.9 seconds. Sean Browne said a result below one second was appropriate for this type of space, while making clear that some reverberation should remain. Chef-owner Eric Yost described the intent as: “I wanted it to be vibrant,” and “I wanted it to have energy.” The case demonstrates one measured intervention in one venue; it does not establish a target for every restaurant. Read the case study at Suburban Beer Garden.

Why NRC alone cannot predict the room

Material ratings are useful inputs, not guarantees. Knauf explains that the Noise Reduction Coefficient (NRC) is an average of absorption or reflection at four frequencies. Two products can therefore have the same NRC while behaving differently across bass, speech and high-frequency ranges. Its restaurant guide discusses weighted sound absorption as a broader way to consider frequency performance: Knauf, “Acoustic Design for Restaurants”.

Ask for the frequency-dependent data, the test configuration and the amount of material assumed. Then consider how the product will be installed: an air gap can change performance, while a ceiling cloud, wall panel or upholstered surface interacts differently with the room. A product rating does not account for ceiling height, table spacing, open doors, occupancy, music or untreated parallel surfaces. Whole-room measurements remain the meaningful check.

Operational controls after the build

  • Set music by zone. Keep loudspeakers aimed at the intended audience and avoid turning up the entire room to compensate for one poorly covered area. In Rindel’s model, music above 60 dB can compromise verbal communication.
  • Control building services. Specify quiet fans, isolate vibration, maintain bearings and schedule noisy equipment where it will disturb fewer diners.
  • Manage the kitchen interface. Use doors, seals, lined ducts or layout separation where appropriate, while preserving safe service routes and required ventilation.
  • Protect the treatment. Keep panels clear of stored items, grease and impact; replace damaged or relocated elements so the designed absorption remains present.
  • Review peak service. Recheck music and staff practices after opening. A room that measures well empty may still trigger the Lombard effect when every table is occupied.

A practical retrofit sequence

  1. Collect complaints and map where conversation fails.
  2. Measure reverberation and identify music, kitchen, HVAC and service noise under representative occupancy.
  3. Set a concept-specific brief for speech clarity, privacy and acceptable liveliness.
  4. Model treatment area and placement across walls and ceilings, not just a single product location.
  5. Coordinate finishes with lighting, sprinklers, ventilation, accessibility, fire protection and cleaning procedures.
  6. Install in phases if necessary, prioritising the loudest or most reflective zone.
  7. Verify the occupied room and adjust music, furniture, partitions or additional absorption based on the result.

Common mistakes and how to avoid them

  • Chasing one “perfect” decibel value: use a design criterion with its source and conditions, then adapt it to the venue’s concept and occupancy.
  • Adding a handful of decorative panels: estimate the absorption area required for the room and distribute it where reflections occur.
  • Specifying by NRC only: compare frequency data and installation conditions; equal averages do not mean equal performance.
  • Treating only the ceiling: inspect wall-to-wall reflections, glazing, furniture and the sound path from bar or kitchen areas.
  • Ignoring sources: absorption will not cure an excessively loud extractor, dishwasher, refrigeration unit or badly aimed loudspeaker.
  • Designing for an empty room: assess full-service occupancy, because more talkers can raise the noise floor through the Lombard effect.
  • Hiding treatment until late: integrate it with elevations and reflected ceiling plans so acoustic elements support, rather than fight, the architecture.

Match the acoustic response to the restaurant’s mood

Venue intent Priority Design emphasis
Quiet or fine dining Conversation, comfort and privacy More controlled reverberation, lower background music, separation from kitchen and service noise.
Casual all-day restaurant Clear speech with tolerance for changing occupancy Distributed wall and ceiling absorption, flexible zoning and operational music control.
Bar or high-energy venue Liveliness without unintelligible speech at key service points Targeted treatment over the bar and near seating, protected staff communication and controlled loudspeaker coverage.

The best restaurant acoustics are therefore an architectural and operational decision. Measure the room, define the experience, select materials for their actual frequency behaviour, and verify performance with people and equipment in place. That process preserves the energy diners came for while removing the reverberant noise that makes them work to hear each other.
