In the United States, half-and-half is a dairy product made from milk and cream with at least 10.5% but less than 18% milkfat. It is not defined by a fixed 50/50 household recipe. You can approximate it at home with equal parts whole milk and heavy cream, but half-and-half does not whip like heavy cream and can curdle if heated too aggressively.

What is half-and-half?
The U.S. federal standard of identity defines half-and-half as a mixture of milk and cream containing not less than 10.5% and less than 18% milkfat. The regulation also requires it to be pasteurized or ultra-pasteurized; it may be homogenized. These specifications appear in 21 CFR § 131.180.

The same regulation permits certain optional ingredients, including emulsifiers, stabilizers, nutritive sweeteners and characterizing flavors. If you need to know exactly what is in a particular carton, check its ingredient declaration. The term’s legal definition here is specific to the United States; it should not be assumed to mean the same thing in every country.

Is half-and-half a 50/50 mixture?
Not necessarily. The name does not mean that every carton is made from precisely equal volumes of milk and cream. The U.S. standard sets a milkfat range, not a single recipe or fixed ingredient proportion.
What can I use instead of half-and-half?
Whole milk and heavy cream
Food Network suggests combining equal parts whole milk and heavy cream as a practical home substitute. This is a kitchen approximation, not a regulatory formula guaranteed to yield a particular milkfat percentage. See Food Network’s half-and-half guide.

Whole milk and melted butter
Food Network also describes stirring melted butter into whole milk as a workaround when heavy cream is unavailable. Treat it as a culinary approximation, not as the same standardized dairy product as half-and-half.
Can you whip half-and-half?
No—not into the stable whipped peaks you get from heavy cream. Food Network notes that half-and-half does not have enough fat to whip like heavy cream. Use heavy cream when a recipe depends on whipped cream holding its shape.

Can you boil half-and-half?
It can be heated in cooking, but a hard or prolonged boil may increase the risk of curdling, especially in soups and sauces. Food Network advises adding it near the end of cooking and heating gradually to a simmer. That approach can help reduce curdling; it does not guarantee that half-and-half will stay smooth in every recipe. For the culinary guidance, see Food Network’s half-and-half guide.

The FDA lists 30 mL, or 2 tablespoons, as the labeling reference amount for cream and half-and-half in 21 CFR § 101.12. This is a reference used for food labeling, not a personalized serving recommendation or dietary assessment.
