What Is Matcha? How It’s Made, How It Differs, and How to Prepare It

Matcha is powder made from tencha, not just any ground green tea. Learn how it is produced, how to whisk it, and what “ceremonial” and “culinary” labels mean.

Matcha is finely powdered tea made from tencha, a shade-grown Japanese green tea that is steamed, dried without rolling, and then ground. It is not simply any green tea leaves milled into powder. For a basic cup, whisk matcha powder with hot water; a bamboo whisk is useful but not essential.

What is matcha?

Matcha is a powdered tea traditionally made by grinding dried tencha. The Japan Matcha Association defines the process as steaming fresh tea leaves, drying them without rolling, and grinding the resulting tencha. The Japanese Ministry of Agriculture, Forestry and Fisheries likewise describes matcha as powder made from tencha, and identifies it as a recognizable Kyoto tea product. What is matcha made from?

Matcha starts with tea leaves cultivated under shade before harvest. The leaves are steamed and dried without being rolled; this dried leaf material is called tencha. Tencha is then ground into the fine powder used to prepare matcha. The Japan Matcha Association associates shading with a savory aroma, less astringency, and a sweeter taste. A 2017 study also summarizes earlier findings that pre-harvest shading increases amino acids and caffeine while decreasing catechins. Japan Matcha Association; Horie, Ema, and Sumikawa, 2017.

Is matcha just powdered green tea?

No. Matcha specifically refers to powder made from tencha. Powdered sencha or other green tea may look similar, but it comes from a different tea and is not matcha by that definition. The market includes products described as cooking matcha or food-industry matcha as well as powdered green tea from other teas. How do you make matcha?

  1. Optional: Sift the powder through a fine mesh sieve to break up clumps.
  2. Add matcha powder to a bowl or cup and pour in hot water.
  3. Whisk briskly until the powder is dispersed and the surface is lightly frothy. A bamboo whisk, or chasen, is a traditional tool; a bowl and sifter are conveniences, not prerequisites.

Matcha powder is also used in food and drinks. If that is your purpose, choose a product whose maker indicates it is suitable for cooking rather than relying on a grade word alone.

Does matcha have caffeine?

Yes. Matcha is not caffeine-free. JETRO categorizes it as high in caffeine relative to the Japanese green tea categories on its page, and the 2017 paper summarizes research linking shade cultivation before harvest to increased caffeine. Is culinary matcha different from ceremonial matcha?

These are common market descriptions, not universal international grades. The Japan Matcha Association says there is no international definition of matcha, and the 2017 study does not establish a retail certification scheme. It reports that its tea-ceremony-grade samples contained more than 1.8 g/100 g dry weight theanine and more than 250 mg/100 g dry weight chlorophyll a, but those measurements describe the study’s samples—not a general threshold that every product bearing a particular label must meet. Choosing a product

For a purchase, consider the intended use (plain drinking or cooking), whether the powder is explicitly tencha-derived matcha, the stated origin and producer, ingredient list, harvest details if supplied, freshness and storage guidance, and price per gram. Color or a single chemical measure cannot establish quality on its own, and “ceremonial” or “culinary” wording is not a reliable universal grade.

Where matcha comes from

Japan’s Ministry of Agriculture, Forestry and Fisheries identifies matcha as a notable Kyoto tea product. Its Uji tea page says first-picked leaves appearing from late April to late May are used mainly for tencha and gyokuro. The Japan Matcha Association recounts tea’s introduction to Japan and the development of tea ceremony culture, while noting differing theories about tea’s origins; those historical details are best understood as the association’s account. What matcha can—and cannot—tell you about health

Matcha contains caffeine and tea compounds including amino acids and catechins, but composition facts do not establish that drinking it prevents, treats, or cures disease. The evidence cited here does not support guaranteed claims about weight loss, anxiety relief, or improved cognition.
