Bánh chưng is a square Vietnamese cake made from glutinous rice, usually filled with mung bean and fatty pork, wrapped in leaves and cooked. It is closely associated with Tết, the Vietnamese Lunar New Year, and is also described as a food offering to ancestors.
What is bánh chưng?
Bánh chưng is a savory, compact rice cake. Its outer layer is sticky or glutinous rice; mung bean and pork are commonly used inside. The cake is wrapped in leaves before cooking. The Los Angeles County Department of Public Health likewise categorizes bánh chưng as a rice cake made with rice, beans, and meat or fruit wrapped in leaves for cooking (department document).
What is bánh chưng made of?
The Vietnam Government Portal identifies glutinous rice, mung bean, and fatty pork as the main components. Preparation can vary: a government report describes selecting and soaking sticky rice, preparing mung bean, and seasoning pork with pepper, onion, and salt. It mentions lá dong and broad banana leaves among the leaves used for wrapping (Vietnam Government Portal, February 8, 2024).

What does bánh chưng symbolize?
The Vietnam Government Portal says: “Banh chung is square as it symbolizes the earth, while banh tet is tube-shaped (ancient Vietnamese people believed the sky is round, the earth is square).” This is the portal’s account of traditional symbolism, rather than a claim that every person interprets the cakes in the same way (Vietnam Government Portal, February 12, 2021).

The portal also presents bánh chưng as a Tết food and an offering to ancestors. Another government report describes families gathering to wrap bánh chưng and bánh tét and tend the cooking pot, illustrating how making the cakes can be a seasonal family activity without implying that every household observes it in the same way.

How long does bánh chưng cook?
The Embassy of the Socialist Republic of Viet Nam in Singapore reports a cooking time of 10–12 hours. The same overview describes cakes measuring 15–17 cm on each side and 4–6 cm thick (Embassy overview; date not shown). These are descriptive figures from that source, not a universal cooking recommendation or a standardized cake size. Actual preparation depends on the recipe and cake.
