At Shinji, a Japanese steakhouse at 333 Bay Street in Toronto’s Financial District, denim is an architectural idea rather than a fabric motif. Toronto studio Odami translates the craft and lasting character associated with Japan’s denim industry into indigo-toned surfaces, tactile natural materials and a carefully paced route from entrance to dining room.
How denim becomes an interior concept
Odami’s design draws on Japan’s denim industry without turning the restaurant into a literal denim-themed room. Deep blue limewash walls, blue acoustic baffles and banquette upholstery establish the color story; ash seating, pale stone and warm lighting temper it with grain, texture and contrast. The result, as described in Design Milk’s October 5, 2026 feature by Sophie Sobol, is restrained rather than overtly decorative.
The palette also gives the idea room to feel material-led. Indigo is carried across different surfaces and functions, while wood and stone keep the space from reading as a single flat field of blue. The concept connects the interior to craftsmanship and longevity, not just to denim’s recognizable color.

A changing sequence from entry to dining room
The experience begins at a slightly ramped entrance and moves toward a dining room where guests can see chefs at work. That progression makes the kitchen part of the restaurant’s atmosphere rather than hiding it behind the dining space.
A separate transition leads toward the bathroom: the hallway shifts from inky blue to magenta. The feature describes the bathroom as a reference to karaoke bars and Japanese nightlife, giving this brighter passage a different character from the restrained dining room.

Japanese cooking, ingredients and hospitality
Shinji is a project from Harlo Entertainment, the hospitality group also associated with Linny’s and Sunny’s Chinese. Executive chef and partner Jia Zou and his team traveled in Japan and met local producers, including in Himeji and Kobe, to learn about ingredients and techniques.
Zou described the influence of those trips in the Design Milk feature: “We spent a lot of time traveling through Japan, eating everywhere we could, from neighborhood spots to some of the country’s best restaurants,” Zou explains. “What stayed with us wasn’t just the food, but the care that went into every meal. Great ingredients, good technique, and genuine hospitality became the benchmark for everything we wanted to create at Shinji.”
