How to Make Candy Molds with Cornstarch

A practical guide to shaping candy with cornstarch impressions, including the basic steps, burn precautions, and why setting times vary.

To make a cornstarch candy mold, press a clean shape into a shallow bed of loose cornstarch, fill the impression with candy mixture, let it set, then remove the candy and brush away the starch. The method creates one-off impressions rather than reusable hard molds, and the candy’s own recipe determines how it should be cooked and handled.

What a cornstarch candy mold is—and when to use one

A cornstarch mold is a cavity pressed into a bed of starch, not a rigid mold that you pour into and reuse. It can be useful when you want a custom impression or do not have a suitable conventional mold. The FAO’s small-scale confectionery guide describes preparing a tray of cornstarch, “not packed too tightly,” then making cavities with wooden shapes. FAO, 6. Sugar confectionery.

Starch molding is also used industrially for semi-liquid confectionery; an EPA technical document notes that starch takes impressions and absorbs moisture. That explains why it can work for some candy mixtures, but it does not establish that cornstarch is best for every recipe. EPA technical document on candy manufacturing.

What you’ll need

  • A shallow tray or box with enough room for a layer of cornstarch.
  • Dry, loose cornstarch (also called cornflour in some regions) to make the molding bed.
  • A clean shape to press into the starch, such as a small wooden form.
  • Candy mixture that is suitable for this method, prepared according to its recipe.
  • A spoon, small ladle, or other suitable tool for depositing the mixture.
  • A soft, clean brush for removing loose starch after unmolding.

A candy thermometer is optional for the mold itself. It may be useful when a recipe calls for boiling syrup and specifies a temperature to reach; follow that recipe’s equipment and cooking instructions. The FAO guide lists a thermometer among equipment for boiling sugar solutions, not as a requirement for making a starch impression.

How to make and fill the impressions

  1. Prepare the tray. Spread a bed of dry cornstarch in a shallow tray or box. Keep it loose rather than packing it tightly; the starch needs to hold an impression.
  2. Press the shape. Push a clean wooden or other suitable shape into the surface to make a cavity. Lift it carefully so the impression stays intact. Make one cavity for each piece.
  3. Prepare the candy mixture. Cook and handle the candy according to its specific recipe. Boiled syrup and confectionery can cause serious burns. If the mixture is too hot to handle safely, do not hand-form it; follow the recipe’s instructions for cooling and depositing.
  4. Fill the cavities. Carefully deposit the mixture into each impression, taking care not to collapse the surrounding starch. Use a tool suited to the mixture and the recipe’s handling instructions.
  5. Let the candy set. Leave the tray undisturbed until the candy is firm enough to remove. There is no single setting time that applies to every candy: the type of confection, its moisture, and the surrounding conditions all matter.
  6. Unmold and clean. Lift out the set pieces and brush away adhering loose starch.

Setting time and factory methods

Do not use industrial conditioning times as a home recipe. In a factory “mogul” process, machines print starch trays, deposit measured portions, condition the candy, remove it, brush it, and recycle the starch. Factory times vary by product; they are not a universal guide for a shallow tray at home. Choosing between starch impressions and conventional molds

The sources support cornstarch impressions as a small-scale option, but they do not provide a controlled comparison with silicone or metal molds. Choose based on your candy and practical needs rather than assuming one method is always better.
