Make fall potpourri by combining crisp, fully dried flowers and fragrant herbs with dried citrus peel and warm spices, then letting the blend cure in a sealed container. Rose and marigold petals make a colorful base; rosemary, thyme, or sage add aroma, while cinnamon, cloves, seed pods, and small cones bring autumn character.

Choose flowers and botanicals for scent and color
Build the blend with two kinds of ingredients: aromatic material for fragrance and decorative pieces for color and texture. Rose and marigold are recipe-supported flower choices. Lavender, violets, peonies, statice, and strawflowers are other flowers listed by Nebraska Extension. For a fragrant herb component, consider rosemary, thyme, sage, lemon verbena, scented geranium, lavender, or mint.

- For a fall look: add dried orange peel, cinnamon sticks, cloves, allspice, seed pods, or small pine cones. These add warm scent, color, or texture; some are more decorative than aromatic.
Use plant material that has not been treated with pesticides. Potpourri is for fragrance and decoration, not for eating.

Dry flowers until crisp
Moisture can make a blend musty or moldy, so start with thoroughly dried plant material. Spread petals and leaves in a single layer in a dark, ventilated place. North Carolina Cooperative Extension says drying petals and leaves commonly takes one to two weeks, but conditions and plant material vary. Go by the result, not the calendar: pieces should feel crisp and no longer pliable.
Make a dried-flower fall potpourri
This baseline follows the University of Georgia Cooperative Extension recipe proportions. Its example calls for rose or marigold among the flowers, and lemon verbena or scented geranium among the herbs. The fall additions below are seasonal adaptation ideas supported by extension guidance, not a separately tested formula.

- Measure the base: combine 1 quart dried herb leaves with 1 quart dried flowers or flower parts.
- Add fixative: mix in 1 ounce of orris root or another suitable fixative. Orris root helps absorb and release fragrance oils over time; UGA also names calamus, gum benzoin, and vetiver as common fixatives.
- Add autumn accents: fold in dried orange peel, cinnamon, cloves, and a modest amount of seed pods or small cones. Thyme or sage can shift the herb note in a more autumnal direction.
- Scent lightly: add 5–10 drops of essential oil, mixing thoroughly. Pine or Douglas-fir oil is one seasonal option; UC Master Gardener Program of Sonoma County uses a few drops of either in a holiday blend.
- Seal and cure: put the mixture in a nonmetallic, tightly covered container and store it in a cool, dark place. Shake or stir it periodically while it seasons.
Use the right amount of fixative and allow time for scent to develop
Recipes use different proportions, so keep the fixative amount tied to the recipe you follow rather than combining measures. UGA’s recipe uses 1 ounce of fixative for 1 quart each of dried herbs and flowers. UC Master Gardener Program of Sonoma County’s 2026 example uses about 2 tablespoons of orris root powder per 4 cups of dried material.

The recipe above follows UGA’s roughly two-month seasoning period. A shorter period may be suggested in other recipes, but fragrance develops as the blend rests; there is no single curing time that applies to every mixture.

Store and display the finished blend
Keep the potpourri sealed in a cool, dark place during curing. Glass is a practical choice for storing dried materials; Nebraska Extension notes that plastic or metal may interact with aromatic oils, and UGA recommends nonmetallic containers. After curing, transfer a portion to a decorative lidded jar or arrange it in a sachet for display. Keep the unused blend sealed so its aroma lasts longer.

The extension recipes provide different amounts and ingredients; they do not establish a universally safe dose. Keep the finished potpourri away from children and pets, and do not use it as food.
