How to Make Latte Art with Steamed Milk: A Beginner’s Guide

Steam milk into glossy, fluid microfoam, then pour high to mix and low to draw a heart. A practical beginner guide to latte art with steamed milk.

Good latte art starts with milk that is smooth, glossy and fluid—not a cap of stiff foam. Steam cold milk by adding a little air early, then circulate it into an even microfoam. For the pour, begin with the pitcher higher to mix the milk into the espresso; lower it close to the surface as the cup fills to draw the white pattern. A heart is a practical first design because it lets you practise both stages.

What makes milk suitable for latte art?

Steamed milk needs fine, evenly distributed bubbles so it flows as one liquid and can sit visibly on the espresso. La Marzocco’s guide says that milk must be steamed to a particular texture to produce crisp, well-formed designs (How to pour latte art). A useful visual cue is a glossy surface and a consistency like wet paint.

  • Too much air: the milk becomes thick and foamy, making it harder to pour a clean shape.
  • Too little air: it lacks the structure needed for a pattern to show clearly.
  • Well-integrated microfoam: fine bubbles are distributed through the milk, so it pours smoothly rather than separating into liquid and a foam cap.

Barista Hustle suggests increasing the milk’s volume by about one-third as a steaming heuristic, and describes a 20–50% increase as a workable range for latte art. These are technique targets, not guarantees; the right result depends on the milk, pitcher and drink.

Choose a pitcher and prepare the cup

Use a steaming pitcher that gives the milk room to move without being oversized for the drink. La Marzocco offers examples, not a universal sizing rule: its steaming guide lists a 12 oz pitcher for drinks under 8 oz and a 20 oz pitcher for drinks of 8–12 oz. Its Linea Mini article gives 30 cl (12 oz) for a 125–250 mL drink and 60 cl (20 oz) for a 350 mL drink (Steaming milk on the Linea Mini; How to Steam Milk).

Start with cold milk. If it suits your workflow, steam before pulling the espresso so the finished milk does not have to wait. Prepare a clear espresso surface for pouring; a gentle swirl can help even it out. A tilted cup can make it easier to place the pattern on the surface.

Steam the milk into glossy microfoam

  1. Purge the steam wand. Follow your espresso machine’s instructions to clear condensation before steaming.
  2. Add air while the milk is cold. Position the wand tip at or just below the surface and introduce a little air. Listen for controlled, quiet incorporation rather than harsh sputtering. Barista Hustle’s microfoam lesson puts the timing plainly: “Entrain the air into the milk before it gets warm” (Making Microfoam).
  3. Submerge the tip and create circulation. Once the milk has enough air, position the wand to keep the milk moving in a vortex. This helps incorporate the bubbles as the milk heats. La Marzocco’s Linea Mini instructions describe keeping the sound controlled and fairly quiet; wand positioning varies by machine.
  4. Stop at an appropriate temperature. La Marzocco’s 2022 steaming guide gives 55–60°C (130–140°F) as a ready-to-drink target. Treat it as manufacturer guidance for that guide’s context, not a universal setting for every milk, machine or preference.
  5. Finish and pour promptly. If larger bubbles remain, tap the pitcher gently, then swirl to keep the milk integrated. Pour soon after steaming, before the foam has time to separate.

Pour a heart, then build on it

  1. Begin high and pour into the centre. Hold the pitcher above the cup and pour a modest, steady stream. At this height, the milk mixes into the espresso and establishes a base rather than immediately drawing a white mark.
  2. Lower the spout as the cup fills. Bring it close to the surface and increase the flow when you are ready for the milk to appear on top. Keep the pour controlled so the white shape grows where you want it.
  3. Make the heart’s body. Continue pouring close to the surface until a rounded white shape forms. Small adjustments to the pitcher’s position and flow affect its size and placement.
  4. Cut through to finish. Lift the pitcher slightly and draw a narrow stream through the centre of the shape toward the far edge of the cup. This creates the heart’s point.

La Marzocco’s pouring guide describes the same key change in pitcher position: start higher to establish the base, then bring the spout close to the surface so the pattern can show (How to pour latte art). Practise one heart shape at a time before moving to a tulip or rosetta, which require more control over flow and placement.

Troubleshoot common pouring problems

  • The milk pours as a thick lump or foam cap: you may have incorporated too much air or allowed the milk to separate. Use less air during the early stage and swirl before pouring.
  • The pattern disappears beneath the surface: begin with the pitcher higher to mix the milk into the espresso, then lower it only when you are ready to lay down the visible pattern.
  • The design looks faint or will not form: check whether the milk has enough fine, integrated microfoam. Milk that is too liquid lacks structure; milk with large bubbles is not evenly textured.
  • The pour is uneven: make sure the pitcher is close to the surface when drawing the white shape, and use a steady flow rather than stopping and restarting.
  • The milk separates while you set up: swirl it to bring the texture back together and pour promptly after steaming.

Exact wand placement and steaming sounds vary across espresso machines, so follow the machine maker’s operating guidance alongside these general cues. La Marzocco’s Linea Mini instructions are specific to that machine and should not be treated as a universal wand-position diagram.
