How to Make Sugar Skulls for Día de Muertos

Make sugar skulls with a damp-sand sugar mixture, shape them by hand or in a mold, let them dry fully, and decorate with food-safe color or icing.

To make sugar skulls, mix sugar with just enough binder to create damp, packable sand, press it into a skull mold or shape it by hand, let it dry completely, then decorate it with food-safe color or icing. Two museum-tested approaches use different binders: egg white with corn syrup, or meringue powder with water. Here’s how to choose and use either method—and how to approach the skull as part of Día de Muertos rather than generic Halloween décor.

Choose a sugar-skull method

Both recipes produce a moist sugar mixture that holds its shape when packed; neither should become a pourable batter. Choose based on the ingredients and forming style you prefer.

The Mexic-Arte instructions specify sifting the sugar before mixing. For the Ogden method, the museum describes making 1–2 skulls per student and provides explicit mold and icing steps. Recipe details and mold designs differ, so follow the directions supplied with your mold.

Gather tools and keep food materials separate

Set out a mixing bowl and spoon, your chosen ingredients, and—if molding—plastic skull molds. Keep cornstarch or a cardboard mold-release board nearby if needed, along with decorating supplies such as food coloring, a fine brush, or icing. Keep edible ingredients separate from nonfood craft materials.

Mix the sugar base

Egg-white method

  1. Sift 2 1/2 cups sugar into a bowl.
  2. In a separate bowl, mix one extra-large egg white (or two small egg whites) with 1 teaspoon light corn syrup and 1 teaspoon vanilla.
  3. Work the liquid into the sugar gradually, mixing until the texture resembles damp sand and holds together when pressed.

Meringue-powder method

  1. Combine 2 cups granulated sugar with 2 teaspoons meringue powder.
  2. Sprinkle in 2 teaspoons water and mix thoroughly until all the sugar is moistened and has a wet-sand consistency.

Adjust the texture before shaping

For the Mexic-Arte hand-shaping mixture, add water 1 teaspoon at a time if it is crumbly; if it is too moist, work in sugar 1 tablespoon at a time. Make small adjustments and check whether a squeezed handful holds its shape. Humidity can slow drying, so allow extra time rather than decorating a soft skull.

Shape by hand or use a mold

Hand-shape portions

Pinch off a heaping tablespoon of mixture and shape it into a skull. Set each piece on a clean surface where it can dry undisturbed overnight. This is the simplest option if you do not have a mold, though hand-shaped skulls may vary in size and detail.

Pack a plastic mold

  1. Press the mixture firmly and evenly into the mold, filling the details and avoiding loose pockets.
  2. For the Ogden method, place a cardboard piece about 5 by 5 inches over the filled mold.
  3. Invert the mold quickly onto the cardboard, then lift the mold away.
  4. Leave the skull to dry for 24 hours before decorating.

Use the mold maker’s release directions if they differ; mold shapes and instructions vary.

Let the skulls dry, then decorate

Wait until the skulls are completely dry and firm before decorating. The Mexic-Arte guide specifies overnight drying for hand-shaped pieces; the Ogden method specifies 24 hours for molded skulls. Damp conditions can extend drying time.

For painted details, use food coloring with a fine paint brush. Another option is hard-drying colored icing. The Ogden icing uses powdered sugar, water, meringue powder, and concentrated food coloring; its instructions say to refrigerate the icing until use and to let decorated skulls dry completely before handling. Keep decorations food-safe if the skulls will be handled as edible items.

Use the skull thoughtfully for Día de Muertos

Sugar skulls, or calaveritas, are associated with Día de Muertos ofrendas. The Mexican Museum describes them as symbols of loved ones who have died; a deceased person’s name may be written on the forehead (The Mexican Museum). An ofrenda may also include photographs, marigolds (cempasúchil), candles, papel picado, favorite foods, and drinks. The Mexican Museum explains that candles guide souls to the altar, while food and drink offerings are meant to please the departed (The Mexican Museum).

Customs vary among families and regions. The Mexic-Arte Museum describes November 1 as associated with deceased children and November 2 with adults, while noting that observances differ (Mexic-Arte Museum sugar-skull guide). If you are making skulls for an ofrenda, follow the practices of the family or community you are honoring rather than treating the activity as generic Halloween decoration.

Hand out or package finished skulls

The Mexic-Arte guide suggests handing skulls out or wrapping them in small cellophane bags tied with ribbon. For an ofrenda, a name on the forehead can identify the loved one being remembered; customs and choices are personal.
